Well I accomplished my goal of using only what was in my stockpile last week! No side grocery trips for me for the first time in a long while! Its the small things people, take joy in the little successes as well as the big ones!
So for this week’s menu, I did my grocery list based on what I already have in my stockpile and just got what I would need to supplement for meals and got what I need to replenish my stockpile too.

Monday – Chicken with rice in cream of mushroom soup with mixed vegies

Friday – Pasta Bake
Saturday – Egg salad sandwiches with tomato soup

We have a new addition in our house, Trixie the kitten! We had been trying to decide whether to wait until we are in a house and get the dog and cat at the same time or if we wanted to get the cat now. Well Sean was looking through the newsletter that the hospital puts out and there was an ad for free kittens. We contacted them and Trixie came home last night!
Hannah and Trixie are a match made in little girl heaven! Really cute together. They have been playing all day and both are napping now.
So the trip started off early Monday morning, we all piled into the Suburban, yes, all 8 of us. Dad and Sean up front, Erica and Hannah and me in the middle row, Aunt Lora and Mom and Ray in the last row. It was a tight fit, but fit we did. We took the ‘scenic’ route getting up to the West Grand Canyon. Went through Wickenburg and Kingman, stopped in at the local Walmart for a potty break and to ask directions to the nearest Dairy Queen. Ah the important things in life, potty breaks and Blizzards…anyway, we got back on the road and finally came to the sign that said Grand Canyon West! We had to drive down 21 miles of unpaved road with Mario Andretti at the wheel. Here is what resulted in that..
after we got back on the road, we pull up to what looks like just an airport. Turns out it was the airport on the Hualipai Indian Reservation which is also the area that you have to catch a bus (after you pay for your tickets of course) to go to the SkyWalk. http://www.nps.gov/grca/planyourvisit/skywalk.htm
Dad asked who of us wanted to go out on the SkyWalk? I had said originally no way was I doing that. No way, no how. Well, I thought about it and I decided, what the heck! When would I have another opportunity to do something so amazing? Its not like I go to the Grand Canyon every day. Or even every year or every few years for that matter. What a great experience to be able to share with my family. I am so glad I did it! So everyone said they wanted to do it. Dad went and got the tickets, we all hopped on the bus and it took us the 4 miles to ‘Eagle Point’. If you look at this picture closely you will see why its called Eagle Point. We all had a great time. It is such an amazing sight to see.
After we did the SkyWalk we hopped back on the bus and drove through the other spot on the West side that they take you to. We didn’t get out as we were all pretty tired and wanted to get back on the road and get some lunch and head home. All in all it was a 10 hour road trip!
We got back home at about 8pm that night, but the memories will last a lifetime.
‘…yeah, the yellow caution sign there is letting you know you should slow down…you know the one that said caution: watch the hell out…’ Sean to Dad after dad took a turn at about 80 mph when he should have been going 35!
So this week I am really going to be utilizing my stockpile, I am going to challenge myself to not go to a grocery store at all this week for anything. I have everything I could possibly need for one weeks worth of meals. That my daughter ends up sleeping in my bed while I am here on the uncomfortable couch? Ok, so fine, she has been up all night throwing up and I just want her to get some sleep and Sean worked two jobs yesterday and didn’t get home til 230 am and he needs some sleep too, but I am totally getting the shaft here! Oh well, all part of the job I suppose…

What is your favorite thing about Summer?
One of my favorite things is taking day trips to Flagstaff, Sedona and Prescott! Its so much cooler up North than it is here in the Valley that just to get out of the Valley for a day is such a relief. We go up to Prescott and have a picnic on the lawn at the Courthouse, the grass is lush and green and there are afternoon thunderstorms and tons of fresh air. Can’t wait to take some day trips this summer!
..at the DBacks game! So the DBacks had contacted me several months ago asking if we were interested in doing a Mothers Day event with them. I said that would be awesome, so we planned it. Well last night was the game. We had so much fun! There were 6 of us who went from http://www.phoenixmommies.com and it was a blast! We had really great seats, next to the pool.
Over the course of the game (which the DBacks won 8-4 against the Rockies) we had 2 groups of guys come over and were chatting us up for most of the game. One of them even jumped in the group pic of us moms~ he is THAT GUY!
We don’t get all that many rainy days here in the Valley of the Sun, but today, after we have been having temps in the high 90’s for the last month, we have a rainy, cool day today! The temp is about 80, the clouds are big a fluffy with some rain clouds mixed in. Its been sprinkling, its windy and so nice and relaxing! Today is a perfect day here! I love this weather!
So its time again for Menu Plan Monday! I am excited about this, we did really well with last weeks menu and actually stuck to it for the most part. Only one night did we not stick to it! So my goal for this week is to stick to it completely and use what I already have on hand without having to make any extra trips to the store. Let’s see if I can do it! I think this is a really good start and I am going to be updating this occasionally, as I start wishing for more things hopefully I will be crossing others off the list as having come to pass! I encourage all of you to do the same!
